I just hit 2 years of following an unprocessed foodstyle. I kicked it off in Jan 2011 with a Paleo Challenge at my CrossFit box. Felt so good after those first 9 weeks that I decided to stick with it.
People told me that it wasn’t sustainable and that I would feel deprived and quit. Well, now that I eat a huge variety of vegetables, meats, seafood, eggs, nuts, seeds, fruit, etc., I don’t feel deprived at all. It opened a whole new world of cooking to me and flavors that I would never have discovered if I was still eating easy processed foods. I’m never going back.
